Everyone is always on the go these days. We are all at work, school, ballgames, meetings etc. Who has time for home cooking anymore unless you plan ahead or cook all weekend saving leftovers? Even if you are a stay at home mom, you need some quick ideas so you can save time to spend doing things you love. There has to be some quick and simple recipe ideas out there to help working moms like me. The less ingredients the better.

I watch the cooking channel to get ideas all the time and that helps. But sometimes it is better to hear from everyday people like me. I’m tired of the same old stuff.

I want to share a few of my quick and easy recipes that I like to whip up sometimes. Please share your thoughts ideas and recipes. I need all the help I can get.

  1. Quick Pasta Meal

    1 onion - sliced thin
    Extra Virgin Olive oil
    1 can stewed tomatoes
    1-2 cloves garlic - minced
    1 cup white wine
    noodles of your choice
    Oregano
    Salt & Pepper

    Cut onion in to thin slices. Coat bottome of skillet with olive oil and begin cooking onions until soft. Add garlic for a minute but be careful not to burn. Add wine and canned tomatoes. Add oregeno, salt and fresh ground pepper. Simmer for approx 1 minutes until wine cooks down.

    You can fancy it up a bit by adding cooked shrimp. Yum

    Serve over noodle.

    If you like italian food, this quick dish has great flavor. It's lite and easy.

  2. Pork Chop Cassarole

    4-6 Pork Chops (I prefer boneless)
    Beef Broth
    Rice

    Put 2 cups of uncooked rice in a cassarole dish. Add 4 cups of beef broth. Season pork chops and layer on top of rice. Bake @ 350 until rice is cooked.. approx 30 minutes.

    SO SO easy. The broth gives the rice a great flavor. Sometimes the backing make the top layer of the rice a little crispy..But under that the rice is tender and cooked.

    Pork Chops can be substituted with chicken and you can use chicken broth instead of beef.

  3. Homemade Salsa

    1 can Rotel Tomatoes
    1 can Stewed Tomatoes
    1/2 Onion - chopped
    3/4 tsp cumin
    1 tsp garlic salt
    jalopeno peppers (w/juice)

    Mix all the ingredients in a blender or food processor. Refridgerate overnite for flavors to blend. Very good salsa. Similar to Chili's.

    You can also add lime and/or cilantro if you desire. Enjoy
